Vegetarian Meal Ideas.

Here is a quick guide on 5 vegetarian meal ideas that are easy to make and are sure to go down an absolute treat.




1. Veggie fajita. (V)


For this super quick, easy and delicious vegetarian recipe, all you need is onion, red pepper, black beans, tortilla wraps, sour cream, cheddar cheese and hot sauce.

Start by prepping your onion and pepper, slicing them to the desired size. Then add the onion, pepper and black beans into a frying pan with a splash of olive oil and cook until crispy. Add any seasoning you would like before preparing your tortillas. If you wish, at this point you could spoon the mixture into a bowl and serve for your guests to create their own. Or you can spoon the mixture into the centre of the tortilla and add your sour cream, cheddar cheese and a splash of hot sauce for the extra flavour.



2. Easy tomato and basil soup. (V +Vegan)


For this easy recipe all you will need is 4 ingredients! Tomatoes, onions, garlic and basil plus some salt & pepper.

Start by putting a saucepan on medium heat and adding a small drizzle of olive oil.

You will need to chop your tomatoes into smaller pieces. Then you must dice your onions and finely chop the garlic. Once you have completed this step add them to the saucepan and stir occasionally to avoid burning. Cook them for 4-5 minutes, until the tomatoes start to break down.

Take the tomatoes, onion and garlic mixture and transfer it into a blender or you can use a hand blender and blend it all together until it becomes a puree.

Once blended together, season to taste with salt and pepper and add the basil, then serve with fresh bread or vegans may pair it with sour dough or any other vegan alternative.



3. Cottage Cheese Alfredo (V)



This simple and delicious recipe is super easy and low in calories too which is always an added bonus.

Add cottage cheese, milk, garlic powder and onion powder into a bowl and mix together thoroughly. Once combined you will need to blend the mixture using a blender or a food processor.

Then add your mixture to a saucepan and cook for 2-3 minutes on medium heat.

In a large pot filled with lightly salted water, bring it to a complete boil and cook the spaghetti for around 10 minutes. Next you will need to drain the pasta using a colander.

Once you have completed these steps simply add the spaghetti into a dish and place the sauce on top, finishing it off with a sprinkle of parmesan and a pinch of salt and pepper.



4. Vegan Bolognese (V + Vegan)


You will need: Pasta, dried porcini mushrooms, chestnut mushrooms, onions, garlic, carrots, celery and chopped tomatoes. This recipe is super tasty and delicious.

Start by pouring boiling water into a bowl over the porcini and leave to soak while you start the sauce. For the sauce you will need to heat a large pan and add the chestnuts, mushrooms and a pinch of salt. Then fry while stirring until they start to soften, they should give out some liquid. Keep frying until all the moisture is gone and the mushrooms are a dark golden-brown colour.

Remove the mushrooms and add a generous amount of onions, garlic, carrots and celery into the same pan and place the lid on and cook for 10 minutes or until the vegetables hav


e softened, stirring it now and again. Add herbs and a small amount of tomato puree. Meanwhile, cook the pasta in lightly salted boiling water and drain thoroughly when done.

Drain the porcini mushrooms, ensuring to keep the liquid. Chop them well and add the sauce, along with the strained liquid and add


the chestnut mushrooms too. Mix it all together and add the chopped tomatoes. Then cook for a further 30 minutes.



Dish up the pasta and pour the bolognese mixture on top, tossing until lightly mixed. Enjoy!



5. Vegetable soup (V + Vegan)


This recipe is perfect for those cold days you want to relax and make something super easy but delicious.


Start by adding the sweet onions, carrots and celery in olive oil and tomato paste. The tomato paste adds a lot of flavour to the soup. Add more flavour with garlic, salt and pepper. Pour in vegetable stock, a can of diced tomatoes, potatoes, cabbage and bay leaves. Simmer until the vegetables are tender or for 20 minutes. Then add peas and cook for a further 5 minutes or until done.

The season to taste with salt and pepper and serve.
